  • 2 tablespoons tomato paste
  • 1 cup water
  • 3 large carrots, cut into chunks
  • 3 large potatoes, peeled and cubed
  • 2 stalks celery, chopped
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon black pepper
  • ½ teaspoon dried thyme
  • 1 teaspoon Worcestershire sauce
  • 1 bay leaf
  • 2 tablespoons soy sauce (optional for umami boost)
  • 1 teaspoon sugar (optional, for slight sweetness)

Instructions
 

Sear the Beef:

  • Heat vegetable oil in a large pot or Dutch oven over medium-high heat.
  • Brown the beef chunks in batches, searing on all sides for 4-5 minutes. Remove and set aside.

Sauté the Aromatics:

  • In the same pot, add onions and garlic. Sauté until softened, about 3 minutes.

Build the Stew Base:

  • Stir in tomato paste and cook for 1 minute to enhance the flavor.
  • Pour in beef broth, tomato sauce, and water, then add the Worcestershire sauce, bay leaf, soy sauce, dried thyme, salt, black pepper, and sugar. Stir well.

Simmer the Stew:

  • Return the seared beef to the pot.
  • Bring to a boil, then reduce heat to low and simmer for 1.5 hours, stirring occasionally.

Add Vegetables:

  • Add carrots, potatoes, and celery, and continue simmering for another 30 minutes until the vegetables are tender.

Adjust Seasoning & Serve:

  • Taste and adjust seasoning as needed.
  • Remove bay leaf and serve hot over steamed white rice.
