For the Kidney Preparation:

  • 1 lb beef kidneys cleaned and trimmed
  • 2 cups milk or water for soaking
  • 1 teaspoon salt for soaking

For the Sauce & Cooking:

  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 shallot finely chopped
  • 2 cloves garlic minced
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 1 teaspoon Dijon mustard
  • ½ cup white wine or beef broth
  • ½ cup heavy cream
  • 1 teaspoon fresh thyme or parsley chopped

  • Extra fresh herbs for garnish

Instructions
 

Step 1: Prepare the Kidneys

  • Trim any tough membranes or fat from the beef kidneys.
  • Soak in milk or salted water for 30 minutes to 1 hour to reduce strong flavors.
  • Drain, rinse thoroughly, and pat dry.

Step 2: Sauté the Kidneys

  • Cut kidneys into bite-sized pieces.
  • Heat butter and olive oil in a large skillet over medium heat.
  • Add kidneys and cook for 3-5 minutes, stirring occasionally, until browned.
  • Remove from the pan and set aside.

Step 3: Make the Sauce

  • In the same pan, sauté shallots and garlic for 2 minutes until fragrant.
  • Deglaze with white wine and simmer for 3 minutes until reduced.
  • Stir in Dijon mustard, heavy cream, and black pepper.

Step 4: Finish Cooking

  • Return kidneys to the pan and cook for 5 minutes over low heat.
  • Stir in fresh thyme or parsley, then remove from heat.

Step 5: Serve & Enjoy
