Ingredients
  

  • 2 8-ounce beef sirloin steaks 
  • Salt and freshly ground black pepper to taste
  • 1 tablespoon vegetable oil
  • 2 tablespoons unsalted butter
  • 2 cloves garlic crushed 
  • 2 sprigs fresh thyme 
  • 1 sprig fresh rosemary

Instructions
 

Prepare the Steaks:

  • Remove the steaks from the refrigerator and let them sit at room temperature for about 30 minutes. This ensures even cooking.

Season:

  • Pat the steaks dry with paper towels. Season both sides generously with salt and freshly ground black pepper.

Heat the Pan:

  • Place a heavy-bottomed skillet or cast-iron pan over medium-high heat. Add the vegetable oil and heat until shimmering.

Sear the Steaks:

  • Carefully place the seasoned steaks into the hot pan. Sear for 2-3 minutes on each side to develop a golden-brown crust.

Add Butter and Aromatics:

  • Reduce the heat to medium. Add the butter, crushed garlic, thyme, and rosemary to the pan. Once the butter melts and becomes foamy, tilt the pan slightly and spoon the melted butter over the steaks continuously for about 1-2 minutes.

Check Doneness:

  • Use an instant-read thermometer to check the internal temperature:
  • Rare: 125°F (52°C)
  • Medium Rare: 135°F (57°C)
  • Medium: 145°F (63°C)
  • Medium Well: 150°F (66°C)
  • Well Done: 160°F (71°C)

Rest and Serve:

  • Remove the steaks from the pan and let them rest on a cutting board for 5 minutes. This allows the juices to redistribute. Slice against the grain and serve with your choice of sides.
