Ingredients
  

  • 1 lb 450g ground beef (or substitute with turkey or plant-based meat)
  • 1 tablespoon olive oil
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 red bell pepper chopped
  • 1 can 14 oz diced tomatoes
  • 1 can 14 oz kidney beans (drained and rinsed)
  • 1 can 14 oz black beans (optional, drained and rinsed)
  • 2 tablespoons tomato paste
  • 1 cup beef broth or water
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder adjust for spice level
  • ½ teaspoon cayenne pepper optional for extra heat
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Worcestershire sauce adds depth of flavor
  • ½ teaspoon cocoa powder optional, enhances richness
  • ½ teaspoon sugar optional, balances acidity

Garnishes (Optional):

  • Chopped fresh cilantro
  • Sour cream
  • Shredded cheese cheddar or Mexican blend
  • Lime wedges
  • Tortilla chips for dipping

Instructions
 

Sauté the Aromatics:

  • Heat olive oil in a large pot or Dutch oven over medium heat.
  • Add chopped onions and garlic, sauté for 2-3 minutes until soft.

Brown the Beef:

  • Add ground beef and cook until browned, breaking it up with a spoon.

Add Spices & Veggies:

  • Stir in bell pepper, cumin, smoked paprika, oregano, chili powder, cayenne, salt, and pepper.
  • Cook for another 2 minutes to release the spice flavors.

Simmer the Chili:

  • Add tomato paste, diced tomatoes, beans, beef broth, Worcestershire sauce, cocoa powder, and sugar.
  • Stir well and bring to a simmer.

Slow Cook for Flavor:

  • Reduce heat to low and let it simmer for 45 minutes to 1 hour, stirring occasionally.

Taste & Adjust:

  • Adjust seasoning as needed for spice and salt.

Serve & Garnish:

  • Serve hot with cilantro, cheese, sour cream, or tortilla chips.
