- 1 tablespoon olive oil
- 1 medium onion finely chopped
- 2 cloves garlic minced
- 1 red bell pepper chopped
- 1 can 14 oz diced tomatoes
- 1 can 14 oz kidney beans (drained and rinsed)
- 1 can 14 oz black beans (optional, drained and rinsed)
- 2 tablespoons tomato paste
- 1 cup beef broth or water
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1 teaspoon chili powder adjust for spice level
- ½ teaspoon cayenne pepper optional for extra heat
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon Worcestershire sauce adds depth of flavor
- ½ teaspoon cocoa powder optional, enhances richness
- ½ teaspoon sugar optional, balances acidity
Garnishes (Optional):
- Chopped fresh cilantro
- Sour cream
- Shredded cheese cheddar or Mexican blend

Sauté the Aromatics:
Heat olive oil in a large pot or Dutch oven over medium heat.
