Ingredients
  

  • 3 ripe bananas mashed
  • ½ cup cottage cheese blended for a smoother texture
  • cup honey or maple syrup
  • ¼ cup melted butter or coconut oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 ¾ cups whole wheat or all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon cinnamon optional
  • ½ cup chopped walnuts or chocolate chips optional

Instructions
 

  • Preheat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
  • Prepare the wet ingredients: In a large mixing bowl, mash the bananas. Stir in blended cottage cheese, honey (or maple syrup), melted butter (or coconut oil), eggs, and vanilla extract. Mix until smooth.
  • Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
  • Mix the batter: Gradually add the dry ingredients to the wet mixture, stirring until just combined. If using nuts or chocolate chips, fold them in.
  • Bake: Pour the batter into the prepared loaf pan and bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool and serve: Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack. Slice and enjoy!
