Ingredients
  

For the Crawfish Filling:

  • 1 tablespoon butter
  • ½ cup onion diced
  • ½ cup bell pepper diced
  • ½ cup celery diced
  • 2 cloves garlic minced
  • ½ teaspoon salt
  • ½ teaspoon Cajun seasoning
  • ½ teaspoon paprika
  • 1 pound cooked crawfish tails chopped
  • ¼ cup green onions chopped
  • ¼ cup parsley chopped
  • ½ cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon hot sauce
  • 1 cup shredded Monterey Jack or Cheddar cheese

For the Bread:

  • 1 French bread loaf or Italian bread
  • 2 tablespoons butter melted
  • 1 teaspoon garlic powder

Instructions
 

Step 1: Prepare the Crawfish Mixture

  • In a skillet, melt butter over medium heat.
  • Add onion, bell pepper, and celery. Sauté for 3-4 minutes until softened.
  • Stir in garlic, salt, Cajun seasoning, and paprika. Cook for 30 seconds.
  • Add crawfish tails, green onions, and parsley. Stir and cook for 2 minutes.
  • Remove from heat and mix in mayonnaise, mustard, hot sauce, and cheese.

Step 2: Prepare the Bread

  • Preheat oven to 375°F (190°C).
  • Slice French bread in half lengthwise.
  • Brush with melted butter and sprinkle garlic powder.
  • Spread crawfish mixture evenly on both halves.

Step 3: Bake & Serve

  • Place bread on a baking sheet and bake for 12-15 minutes, until cheese is bubbly.
  • Let cool slightly, then slice and serve hot.
