Ingredients
  

  • 1 pound 450g ground lamb
  • 1 medium onion grated and excess moisture squeezed out 
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • ½ teaspoon turmeric powder optional
  • ¼ teaspoon ground sumac optional, for garnish
  • Flatbreads grilled tomatoes, and fresh herbs (parsley, mint) for serving

Instructions
 

Prepare the Meat Mixture:

  • In a bowl, combine the ground lamb, grated onion, salt, pepper, and turmeric powder.
  • Knead the mixture thoroughly for several minutes until it becomes sticky and holds together well.

Shape the Kebabs:

  • Divide the meat mixture into equal portions (approximately 4-6, depending on preferred size).
  • Mold each portion onto a flat metal skewer, pressing firmly to ensure the meat adheres.
  • If metal skewers are unavailable, shape the meat into long patties suitable for grilling.

Grill the Kebabs:

  • Preheat the grill to medium-high heat.
  • Place the skewered meat over direct heat.
  • Grill for about 3-4 minutes per side, or until fully cooked and slightly charred.

Serve:

  • Sprinkle the cooked kebabs with ground sumac if desired.
  • Serve hot alongside flatbreads, grilled tomatoes, and fresh herbs.
