Ingredients
  

For the Chicken Fried Rice:

  • 2 cups cooked rice preferably day-old jasmine or basmati rice
  • 1 ½ cups shredded rotisserie chicken
  • 1 tablespoon vegetable oil
  • 1 tablespoon sesame oil
  • 2 eggs lightly beaten
  • ½ cup frozen peas
  • ½ cup carrots diced
  • 2 green onions chopped
  • 2 cloves garlic minced
  • 1 tablespoon soy sauce low sodium preferred
  • 1 tablespoon oyster sauce optional for extra flavor
  • 1 teaspoon ginger grated
  • ½ teaspoon black pepper
  • 1 teaspoon sriracha or chili flakes optional for spice

For Garnish & Serving:

  • 1 tablespoon sesame seeds
  • 1 tablespoon chopped fresh cilantro
  • Lime wedges optional

Instructions
 

Step 1: Heat the Pan

  • Heat vegetable oil and sesame oil in a large skillet or wok over medium-high heat.

Step 2: Cook the Eggs

  • Pour in the beaten eggs, scramble them lightly, and remove them from the pan once cooked. Set aside.

Step 3: Stir-Fry the Vegetables

  • In the same pan, add garlic, carrots, and frozen peas. Stir-fry for 2-3 minutes until slightly tender.

Step 4: Add the Chicken & Rice

  • Add the shredded rotisserie chicken and stir for 1-2 minutes to heat through.
  • Stir in the cooked rice, breaking up any clumps.

Step 5: Add the Sauce & Eggs

  • Pour in soy sauce, oyster sauce, ginger, and black pepper, tossing everything to coat evenly.
  • Add the scrambled eggs back into the pan and mix well.

Step 6: Serve & Garnish

  • Remove from heat and stir in green onions, sesame seeds, and cilantro.
  • Serve hot with lime wedges on the side.
