For the Chicken Fried Rice:
- 2 cups cooked rice preferably day-old jasmine or basmati rice
- 1 ½ cups shredded rotisserie chicken

- 2 eggs lightly beaten
- ½ cup frozen peas
- ½ cup carrots diced
- 2 green onions chopped
- 2 cloves garlic minced

- 1 teaspoon ginger grated
- ½ teaspoon black pepper

Step 3: Stir-Fry the Vegetables
In the same pan, add garlic, carrots, and frozen peas. Stir-fry for 2-3 minutes until slightly tender.
Step 4: Add the Chicken & Rice
Add the shredded rotisserie chicken and stir for 1-2 minutes to heat through.
Stir in the cooked rice, breaking up any clumps.
Step 5: Add the Sauce & Eggs
Pour in soy sauce, oyster sauce, ginger, and black pepper, tossing everything to coat evenly.
Add the scrambled eggs back into the pan and mix well.
