Ingredients
  

  • 8 oz ditalini pasta
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 1 small onion chopped
  • ½ cup cherry tomatoes halved
  • ½ cup baby spinach chopped
  • ¼ cup Parmesan cheese grated
  • ½ tsp red pepper flakes optional
  • ½ tsp black pepper
  • ½ tsp salt
  • ½ cup vegetable broth or pasta water
  • ¼ cup fresh basil chopped

Instructions
 

Cook the pasta:

  • Bring a pot of salted water to a boil and cook the ditalini pasta according to package instructions until al dente. Drain, reserving 1/2 cup of pasta water, and set aside.

Sauté aromatics:

  • Heat olive oil in a large skillet over medium heat. Add garlic and onion, sautéing for 2-3 minutes until fragrant.

Add vegetables:

  • Toss in cherry tomatoes and cook for another 2 minutes until softened. Stir in the chopped spinach and cook for 1 minute until wilted.

Combine with pasta:

  • Add the cooked ditalini pasta to the skillet. Pour in the reserved pasta water or vegetable broth and toss everything together.

Season & serve:

  • Stir in Parmesan cheese, black pepper, red pepper flakes, and salt. Garnish with fresh basil and serve warm.
