Ingredients
  

For the Honey Garlic Shrimp:

  • 1 lb large shrimp peeled and deveined
  • 2 tablespoons honey
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil or olive oil
  • 3 cloves garlic minced
  • 1 teaspoon fresh ginger grated
  • ½ teaspoon red pepper flakes optional, for spice
  • 1 tablespoon fresh lime juice
  • 1 tablespoon cornstarch optional for thickening
  • 1 tablespoon water if using cornstarch
  • 1 tablespoon sesame seeds for garnish
  • 2 tablespoons chopped green onions for garnish

For the Coconut Rice:

  • 1 ½ cups jasmine rice or basmati
  • 1 can 13.5 oz coconut milk
  • ¾ cup water
  • ½ teaspoon salt
  • 1 teaspoon sugar optional, for extra sweetness
  • 1 tablespoon butter optional for richness

Instructions
 

Prepare the Coconut Rice:

  • Rinse the jasmine rice under cold water until the water runs clear.
  • In a medium saucepan, combine coconut milk, water, salt, and sugar. Stir well.
  • Bring to a gentle boil over medium heat.
  • Add rinsed rice, stir once, then cover and reduce heat to low.
  • Let it simmer for 15 minutes or until the liquid is fully absorbed.
  • Remove from heat, fluff with a fork, and keep covered.

Make the Honey Garlic Sauce:

  • In a small bowl, whisk together honey, soy sauce, minced garlic, grated ginger, red pepper flakes, and lime juice. Set aside.
  • If using cornstarch, mix 1 tablespoon cornstarch with 1 tablespoon water to create a slurry.

Cook the Shrimp:

  • Heat sesame oil in a large skillet over medium-high heat.
  • Add shrimp and cook for 1-2 minutes per side until they start turning pink.
  • Pour in the honey garlic sauce and let it simmer for 2-3 minutes until slightly thickened.
  • (Optional) If using cornstarch slurry, stir it in and cook for another 1-2 minutes until the sauce thickens.
  • Remove from heat and garnish with sesame seeds and green onions.

Serve and Enjoy:

  • Scoop coconut rice onto plates or bowls.
