For the Lamb Roast:

  • 1 teaspoon salt

For Roasting & Serving:

  • 1 tablespoon butter melted
  • ½ cup beef or lamb broth
  • 1 tablespoon balsamic vinegar for a rich glaze

Instructions
 

Step 1: Prepare the Lamb

  • Preheat the oven to 375°F (190°C).
  • In a small bowl, mix olive oil, garlic, rosemary, thyme, oregano, salt, black pepper, and lemon zest.
  • Rub the herb mixture all over the lamb loin roast, ensuring it’s evenly coated.

Step 2: Sear the Lamb (Optional but Recommended)

  • Heat a large oven-safe skillet over medium-high heat.
  • Add 1 tablespoon of olive oil, then sear the lamb for 2-3 minutes per side until browned.

Step 3: Roast the Lamb

  • Transfer the skillet to the preheated oven (or place the lamb in a roasting pan).
  • Roast for 40-50 minutes, basting occasionally with broth and melted butter.
  • Cook until the internal temperature reaches:
  • 125°F (52°C) for rare
  • 135°F (57°C) for medium-rare
  • 145°F (63°C) for medium

Step 4: Rest & Serve

  • Remove the lamb from the oven and let it rest for 10-15 minutes before slicing.
  • Drizzle with balsamic vinegar and serve warm with roasted vegetables or mashed potatoes.
