Ingredients
  

For the Streusel Topping:

  • 3 tablespoons all-purpose flour
  • ¼ cup brown sugar 
  • 1 teaspoon ground cinnamon 
  • 2 tablespoons unsalted butter slightly softened and cut into pieces 
  • ¼ cup chopped walnuts optional 

For the Banana Bread:

  • 1 ¾ cups all-purpose flour
  • 2 teaspoons baking powder 
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ tablespoon ground cinnamon
  • 2 large ripe bananas mashed 
  • 2 large eggs at room temperature
  • cup granulated sugar
  • cup unsalted butter melted
  • ½ cup buttermilk at room temperature
  • 1 teaspoon vanilla extract 

Instructions
 

Preheat the Oven:

  • Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or line it with parchment paper.

Prepare the Streusel Topping:

  • In a medium bowl, combine 3 tablespoons of flour, 1/4 cup brown sugar, and 1 teaspoon cinnamon.
  • Cut in the 2 tablespoons of butter using your fingers or a pastry blender until the mixture resembles coarse crumbs. 
  • Stir in the chopped walnuts, if using. Set aside. 

Prepare the Banana Bread Batter:

  • In a large bowl, whisk together 1 3/4 cups flour, 2 teaspoons baking powder, 1/2 teaspoon baking soda, 1/2 teaspoon salt, and 1/2 tablespoon cinnamon.
  • In another bowl, mash the ripe bananas until smooth.
  • Add the melted butter, granulated sugar, eggs, buttermilk, and vanilla extract to the mashed bananas. Mix until well combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix.

Assemble and Bake:

  • Pour the batter into the prepared loaf pan, smoothing the top.
  • Evenly sprinkle the streusel topping over the batter. 
  • Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.

Cool and Serve:

  • Allow the bread to cool in the pan for about 10-15 minutes.
  • Remove from the pan and let it cool completely on a wire rack before slicing.
