For the Cod:
- 4 cod fillets 6 oz each
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon olive oil
For the Ginger Soy Glaze:
- ¼ cup soy sauce low sodium preferred
- 1 tablespoon honey or maple syrup
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 tablespoon grated fresh ginger
- 2 cloves garlic minced
- 1 teaspoon sriracha or red pepper flakes optional, for spice
- 1 tablespoon water
- 1 teaspoon cornstarch to thicken
For Garnish & Serving:
- 1 tablespoon sesame seeds
- 2 tablespoons green onions chopped
- 1 teaspoon fresh cilantro chopped
- Steamed rice or sautéed vegetables for serving
Step 2: Make the Glaze
In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, ginger, garlic, and sriracha.
In a separate small dish, mix water and cornstarch until smooth. Set aside.
Step 3: Cook the Cod
Heat olive oil in a non-stick skillet over medium-high heat.
Add the cod fillets and cook for 3-4 minutes per side, until golden and cooked through (internal temp: 145°F / 63°C). Remove from the pan and set aside.
Step 4: Make the Glaze
In the same pan, pour in the soy glaze mixture and bring to a simmer.
Stir in the cornstarch slurry, stirring constantly until the sauce thickens (about 1-2 minutes).
Step 5: Glaze the Cod & Serve
Return the cod fillets to the pan and spoon the glaze over them.
Garnish with sesame seeds, green onions, and cilantro.
Serve hot with steamed rice or vegetables.
