Ingredients
  

For the Cod:

  • 4 cod fillets 6 oz each
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil

For the Ginger Soy Glaze:

  • ¼ cup soy sauce low sodium preferred
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic minced
  • 1 teaspoon sriracha or red pepper flakes optional, for spice
  • 1 tablespoon water
  • 1 teaspoon cornstarch to thicken

For Garnish & Serving:

  • 1 tablespoon sesame seeds
  • 2 tablespoons green onions chopped
  • 1 teaspoon fresh cilantro chopped
  • Steamed rice or sautéed vegetables for serving

Instructions
 

Step 1: Prepare the Cod

  • Pat the cod fillets dry with a paper towel and season with salt and black pepper.

Step 2: Make the Glaze

  • In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, ginger, garlic, and sriracha.
  • In a separate small dish, mix water and cornstarch until smooth. Set aside.

Step 3: Cook the Cod

  • Heat olive oil in a non-stick skillet over medium-high heat.
  • Add the cod fillets and cook for 3-4 minutes per side, until golden and cooked through (internal temp: 145°F / 63°C). Remove from the pan and set aside.

Step 4: Make the Glaze

  • In the same pan, pour in the soy glaze mixture and bring to a simmer.
  • Stir in the cornstarch slurry, stirring constantly until the sauce thickens (about 1-2 minutes).

Step 5: Glaze the Cod & Serve

  • Return the cod fillets to the pan and spoon the glaze over them.
  • Garnish with sesame seeds, green onions, and cilantro.
  • Serve hot with steamed rice or vegetables.
