Ingredients
  

For the Stew:

  • 2 lbs beef chuck cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup all-purpose flour for coating
  • 1 onion chopped
  • 3 garlic cloves minced
  • 3 carrots sliced
  • 3 potatoes cubed
  • 2 celery stalks chopped

For the Broth & Seasoning:

  • 4 cups beef broth
  • 1 cup red wine optional, enhances flavor
  • 2 tablespoons tomato paste
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • ½ teaspoon paprika

For Garnish & Serving:

  • 2 tablespoons fresh parsley chopped
  • Crusty bread or rice optional for serving

Instructions
 

Step 1: Prepare the Beef

  • Pat dry the beef cubes with a paper towel.
  • Season with salt and black pepper, then coat in flour.

Step 2: Sear the Beef

  • Heat olive oil in a large Dutch oven over medium-high heat.
  • Sear the beef cubes in batches, browning on all sides (about 5 minutes per batch).
  • Remove the beef and set aside.

Step 3: Sauté Vegetables

  • In the same pot, add onions, carrots, celery, and garlic.
  • Cook for 3-5 minutes, stirring occasionally.

Step 4: Add Broth & Seasoning

  • Stir in tomato paste, Worcestershire sauce, thyme, rosemary, and paprika.
  • Pour in red wine (if using) and let it simmer for 5 minutes to reduce slightly.
  • Add beef broth and return the beef to the pot.

Step 5: Simmer & Cook

  • Add potatoes and bay leaves, then cover and simmer on low heat for 2 hours.
  • Stir occasionally and check for tenderness.

Step 6: Serve & Garnish

  • Remove bay leaves and discard.
  • Garnish with fresh parsley and serve with bread or rice.
