- 2 cups cooked and shredded chicken
- 4 large eggs
- ½ cup shredded cheese cheddar, mozzarella, or your choice
- ¼ cup diced bell peppers
- ¼ cup diced onions
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon garlic powder
- ½ teaspoon paprika
- 1 tablespoon olive oil or butter
- ½ cup baby spinach optional
- 4 small whole wheat tortillas for wraps or 2 slices of toast (optional)
Heat a skillet over medium heat and add olive oil or butter.
Add diced onions and bell peppers, and sauté for 2-3 minutes until softened.
Stir in the shredded chicken, garlic powder, paprika, salt, and black pepper. Cook for another 3 minutes.
In a bowl, whisk the eggs and pour them into the skillet. Stir gently to scramble the eggs with the chicken and vegetables.
Once the eggs are cooked through, sprinkle shredded cheese on top and let it melt.
(Optional) Add baby spinach and cook for another 1-2 minutes until wilted.
Serve as is, in whole wheat tortillas for a wrap, or with toast.
