Ingredients
  

  • 2 cups cooked and shredded chicken
  • 4 large eggs
  • ½ cup shredded cheese cheddar, mozzarella, or your choice
  • ¼ cup diced bell peppers
  • ¼ cup diced onions
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ½ teaspoon paprika
  • 1 tablespoon olive oil or butter
  • ½ cup baby spinach optional
  • 4 small whole wheat tortillas for wraps or 2 slices of toast (optional)

Instructions
 

  • Heat a skillet over medium heat and add olive oil or butter.
  • Add diced onions and bell peppers, and sauté for 2-3 minutes until softened.
  • Stir in the shredded chicken, garlic powder, paprika, salt, and black pepper. Cook for another 3 minutes.
  • In a bowl, whisk the eggs and pour them into the skillet. Stir gently to scramble the eggs with the chicken and vegetables.
  • Once the eggs are cooked through, sprinkle shredded cheese on top and let it melt.
  • (Optional) Add baby spinach and cook for another 1-2 minutes until wilted.
  • Serve as is, in whole wheat tortillas for a wrap, or with toast.
