For the Chicken Marinade:
- Juice of 1 lime 
- 1 teaspoon ground cumin 
- 1 teaspoon paprika 
- Salt and pepper to taste 
For the Chicken:
- 4 boneless skinless chicken breasts (about 1.5 lbs or 680 g) 
- 2 tablespoons olive oil 
- 1 medium onion finely chopped 
- 3 cloves garlic minced
- 1 cup chicken broth 240 ml 
- 1 cup aji amarillo paste 240 g 
- 1 cup heavy cream 240 ml 
- Fresh cilantro for garnish 
Optional:
- Cooked rice or quinoa for serving 
Marinate the Chicken:
In a bowl, combine lime juice, cumin, paprika, salt, and pepper. 
Add the chicken breasts and coat them well with the marinade. 
Let it sit for at least 30 minutes (or up to 2 hours in the refrigerator for more flavor). 
Sauté the Chicken:
Heat olive oil in a large skillet over medium heat.
Add the marinated chicken breasts and cook for about 5-7 minutes on each side, or until golden brown and cooked through. 
Remove the chicken from the skillet and set aside. 
Prepare the Sauce:
In the same skillet, add the chopped onion and sauté until translucent, about 3 minutes.
Add minced garlic and cook for an additional minute.
Stir in the aji amarillo paste and cook for 2 minutes, allowing the flavors to meld. 
Pour in the chicken broth and bring the mixture to a simmer.
Reduce the heat to low and stir in the heavy cream, mixing until the sauce is smooth and creamy.
Combine and Serve:
Return the cooked chicken breasts to the skillet, spooning the sauce over them.
Let the chicken simmer in the sauce for about 5 minutes to absorb the flavors.
Garnish with fresh cilantro. 
Serve hot with cooked rice or quinoa if desired.
