- 1 tablespoon olive oil
- 4 boneless skinless chicken breasts
- Salt and freshly ground black pepper to taste
- 3-4 cloves garlic minced
- 1 cup chicken broth
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 3 cups fresh baby spinach
- 1 teaspoon Italian seasoning 
- Pinch of red pepper flakes optional
Cook the Chicken:
Heat olive oil in a large skillet over medium-high heat.
Add the chicken breasts and cook for 5-7 minutes on each side, or until golden brown and cooked through. Remove from the skillet and set aside.
Make the Sauce:
In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
Pour in the chicken broth, scraping up any browned bits from the bottom of the pan.
Stir in heavy cream, Parmesan cheese, Italian seasoning, and red pepper flakes if using. Bring to a simmer and cook for 2-3 minutes until slightly thickened.
Combine and Serve:
Return the cooked chicken breasts to the skillet, spooning the sauce over them.
Let everything simmer together for another 2-3 minutes to meld flavors. 
Serve hot, garnished with additional Parmesan cheese if desired.
