Ingredients
  

  • 2 tablespoons olive oil
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon red pepper flakes optional for heat
  • 1 can 15 oz diced tomatoes
  • 1 can 15 oz chickpeas, drained and rinsed
  • 2 cups vegetable broth
  • 3 cups fresh spinach
  • ½ teaspoon salt adjust to taste
  • ¼ teaspoon black pepper
  • 1 teaspoon lemon juice for freshness
  • Fresh parsley for garnish

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add the diced onion and cook until translucent, about 3-4 minutes.
  • Stir in the minced garlic, cumin, smoked paprika, and red pepper flakes. Sauté for another minute until fragrant.
  • Pour in the diced tomatoes and stir well, letting them cook for 2 minutes.
  • Add the drained chickpeas and vegetable broth. Bring to a gentle simmer.
  • Simmer for 15-20 minutes, allowing the flavors to develop.
  • Stir in the fresh spinach and cook for another 2 minutes until wilted.
  • Season with salt, black pepper, and a splash of lemon juice.
  • Serve hot, garnished with fresh parsley.
